Nat Cool is the brainchild of Dirk Niepoort — one of Portugal's most visionary winemakers and the owner of the legendary Niepoort Wines and Ports. Created as a response to a market hungry for fun, easygoing, naturally-made wines for everyday drinking, Nat Cool began in the Bairrada appellation working with Baga, Portugal's indigenous and notoriously tannic red grape. Dirk found a way to coax something entirely different from it: fresh, light, glou-glou Baga with 12% alcohol, minimal sulfur, and zero pretension — bottled in a generous 1-liter format at a cool price.
The 2024 Tinto is organic, vibrant, and built for the table. Expect crunchy red fruit — cherry, cranberry, and wild strawberry — with earthy undertones, bright acidity, and silky, low-extraction tannins. Serve slightly chilled and drink freely.
The Nat Cool rules: Less is more. Cooler = less extraction. Authentic, cool attitude. One liter bottle. Cool price. The incredible lightness of being.
Portugal has been perfecting the art of conservas — premium tinned fish — for over a century, and ABC+ stands among its finest producers. Drawing on generations of Atlantic fishing tradition and meticulous hand-packing techniques, ABC+ sources wild-caught fish from Portugal's pristine coastal waters and preserves them at the peak of freshness in high-quality extra virgin olive oil. The result is a product of exceptional depth and character, far removed from ordinary tinned fish.
The Croaker (also known as Corvina) is a prized Atlantic fish with firm, white, mildly sweet flesh that takes beautifully to preservation in extra virgin olive oil. Rich, delicate, and subtly briny, it delivers clean ocean flavor with a luxurious, silky texture. Serve straight from the tin on crusty bread, alongside a crisp Vinho Verde or dry rosé, or as the centerpiece of a beautifully curated conservas board.
A premium Portuguese conserva — the perfect pantry luxury for seafood lovers.
Smoke, tar, and char on the nose along with stewed plums, blackberries, and figs. The palate is softer on the tongue than the nose might suggest. Berries and figs come through with a little black pepper and cinnamon. Woody tannins settle into the sides of the tongues and linger a little with a background of umami. Pair with game meats, bbq, honeyed hams, and dark chocolate.

Byrrh Grand Quinquina is made to the original late-19th century recipe that earned worldwide fame and inspired fifty years of evocative poster art. Byrrh combines a generous, port-like wine and mistelle base with a firm backbone of natural quinine to produce a fruity, refreshing aperitif.
By itself, with tonic and a twist, or paired with blue cheese. In cocktails, Byrrh mixes well with vodka, gin, tequila, Irish whiskey, and grapefruit. Byrrh is produced in Thuir, in the heart of French Catalan territory, near the coast and border with Spain.
Wine Enthusiast | Concentrated dark fruit leads the nose and palate on this garnet-hued aperitif wine infused with quinine. Complex, rich stewed fruit notes suggest cherry pie and Port brushed with vanilla, finishing long with drying hints of plum skin, sage and dried oregano plus a hint of espresso-like bitterness. Wine & Soul is the joint project of husband and wife Jorge Serôdio Borges and Sandra Tavares da Silva, both qualified oenologists. They bought an old port warehouse in the Vale de Mendiz in the heart of the Pinhão valley in 2003. The estate is 6 hectares with 2.5 ha under vine, averaging over 70 years old and planted with 30+ different varieties. The project is named after their dog Pintas, a Pointer.

A single-vineyard wine, Vinha de São Lázaro owes its name to the small 13th century chapel located in the vineyard that is dedicated to Saint Lazarus, protector of the sick and needy.
Touriga Nacional is a great pairing for any meat dish. In this particular wine, as it is very delicate and full bodied, it is ideal with a lamb tagine, or any variety of matured meats.
Baga | Bairrada, Beira Interior / Portugal
Vintage: 2020 | Size: 750ml
Organic · Natural Fermentation
Located one hundred kilometers south of Porto, Bairrada was long overshadowed — its grapes shipped north to bolster Port production when English demand ran high. Today, a new generation of producers is reclaiming the region’s identity, and Luis Patrão of Vadio is among the most compelling of them. The name “Vadio” is Portuguese slang for idler or dreamer — a fitting tribute to a winemaking philosophy rooted in patience, organics, and letting the land speak.
Baga is Bairrada’s great indigenous red grape: firm, assertive, and full of personality. In Vadio’s hands — with organically farmed vineyards and fermentation from naturally occurring yeasts — it reveals its finest self: sinewy red fruits, cedary side notes, and a high-energy acid lift that makes it one of Portugal’s most food-friendly reds. The 2020 is fresh and vibrant, with currant and berry fruit that is genuinely pleasant and endlessly versatile at the table.
“Fresh berry fruits, currants, really pleasant and enjoyable with many foods.”
— Debra, 67Wine
Pairs with: Roast suckling pig, grilled lamb, duck rice, aged sheep’s milk cheese, or anything off the grill.

Vila Santa is produced in the Alentejo region, located in the south of Portugal. Its name originates from the title given in the 15th century to the members of the ancient Priest Congregation of St. John Evangelist, known simply as Loios. Loios monks have always had a deep connection to the history of Alentejo, especially to its wines.
Cantine Florio is the most storied name in Marsala — founded in 1833 in the port city of Marsala on Sicily's western coast, and the producer that helped define the category for the world. Their Dry Fine Marsala Superiore Secco is the house's everyday expression: a versatile, beautifully balanced fortified wine made from indigenous Sicilian grapes, amber in color, and crafted to be equally at home as an elegant aperitif or as the essential cooking wine for classic Italian preparations. At 375ml, it is the perfect half-bottle for the kitchen and the table alike.
The nose is warm and inviting: raisins, vanilla, dried apricot, and a subtle nuttiness from the oxidative aging. On the palate, the wine is dry, full-bodied, and harmonious — fervent and structured, with a clean, lingering finish. It is the Marsala of choice for chicken Marsala, veal scaloppine, fish preparations, and poultry dishes, and an elegant aperitif alongside aged cheeses.
"A versatile and ductile Marsala Superiore Secco, suitable for everyday occasions. Amber to light brown, with hints of raisins and vanilla; dry, full, harmonic and fervent. The Marsala of choice for fish, poultry and meat preparation. An elegant aperitif to serve with cheese." — Cantine Florio
Sicily's most iconic fortified wine from its founding producer — Cantine Florio Dry Marsala is the benchmark for what a classic, versatile Marsala Superiore Secco should taste like.
Rhum Barbancourt 3 star is 86 Proof rum, Aged 4 years (VSOP) in Limousin oak cask.
Distilled in Haiti from pure sugar cane juice (no molasses) since 1862.
An elegant and fresh nose. Smooth and rich on the palate. Sharp spices cut through a soft, layered structure with pleasantly familiar heat.
Rhum Barbancourt 3 Star (4 Years Old) is a unique Haitian "rhum" that stands apart from typical Caribbean rums. While most rum is made from molasses, Barbancourt is distilled directly from fresh sugar cane juice and aged in French Limousin oak casks, using methods traditionally reserved for Cognac.
The "3 Star" is the youngest aged expression in their core lineup, offering a balance between the raw, grassy notes of the cane and the sweet, woody influence of the barrel.
Food Pairings: The dry, spicy finish makes it a great partner for spicy jerk chicken, grilled pork belly, or even a creamy Gouda or Brie cheese plate.
Style: Red Vermouth (Vermut Rojo) | Origin: Catalonia, Spain | Format: 1.0 Liter | Producer since: 1886
Made in Catalonia since 1886 and only recently imported into the United States, Perucchi is one of Spain’s great vermouth secrets — a Gran Reserva that rewards those who find it. Rich, complex, and deeply aromatic, this is the kind of vermouth that earns a permanent spot on the bar cart and demands to be savored, not just mixed.
Bold spice aromas of fresh gingerbread, autumn woods, and tobacco give way to delectably sweet flavors of black cherry compote macerated in ruby port, finishing with a pleasant, balancing bitter herb note. Classic Catalan vermut character — generous, warming, and endlessly versatile.
Gingerbread, autumn woods, and tobacco on the nose. Black cherry compote, ruby port, and warming spice on the palate. Long, bittersweet herbal finish with excellent balance.
A gentler take on blue cheese, Colston Bassett Stilton offers sweetness and balance alongside a creamy, buttery paste. Delicate blue veining gives it the distinctive appearance of Stilton, making it an inviting choice for a cheese board.
For a simple serving suggestion, pair it with crisp crackers, ripe pear or walnuts. Try a glass of Port alongside it for a sweet contrast, or let the cheese take center stage with good bread.
Gentler, sweeter and more balanced than a ‘typical’ blue cheese, it boasts a creamy, buttery paste pierced with the delicate blue veining characteristic of a Stilton.
A creamy, balanced Stilton for a thoughtfully assembled cheese board.
Quinta Ruban 14 year has spent 10 years maturing in American white oak casks, before being transferred into specially selected ruby port pipes from the Quintas or wine estates of Portugal.
Whisky Advocate 92 Points | This Quinta Ruban succeeds the 12 year old version, adding two additional years of finishing in port casks, while maintaining the same bargain price. The result is a symphony of understated opulence. Marzipan, fresh apple and pear, milk chocolate, red berries, candied ginger, and praline on the nose build slowly, leading into a fruity, spiced palate. Flavors of soft gingerbread, molasses cake, cherry pie, spiced plums, almond nougat, and dark chocolate intermingle with faint strains of pipe tobacco. It sings on the finish, with a parting crescendo of hazelnut, spice, cigar wrapper, and lengthy oak.
Spicy — but not trying-to-prove-something spicy. Short Creek Farm’s Piccante Pork Salame strikes a magnificent balance of heat and bold chili flavor, all thanks to their homebrew fermented chili paste. The result is a salame with real character: deeply savory, warmly spiced, and impossible to put down.
Crafted in Maine from thoughtfully raised pork, this is American artisan charcuterie at its finest — rooted in tradition, driven by flavor.
Smokey Blue is one of America’s most celebrated artisan cheeses — and one of the most original. Handcrafted at Rogue Creamery in Central Point, Oregon from rBGH-free cow’s milk, it begins as a classic Oregon blue before undergoing something extraordinary: 16 hours of cold-smoking over local hazelnut shells. The result is a cheese unlike any other — deeply savory, subtly sweet, and layered with a distinctive smoky finish that lingers long after the last bite. It has earned a World Cheese Award and a devoted following among chefs and cheese lovers across the country.
The paste is velvety and rich with bold blue veining throughout. On the palate, the characteristic tang and earthiness of blue cheese is beautifully tempered by the gentle sweetness of hazelnut smoke, creating a complex, harmonious flavor that is simultaneously bold and approachable. The finish is long, smoky, and deeply satisfying.
Bold, smoky, and utterly original — Rogue Creamery’s Smokey Blue is the American artisan cheese that belongs on every serious cheese board.
This special and rare cuvee has been bottled especially for Christmas from its oak cask.
This Petite Champagne originates from an old family reserve handed down from father to son beginning with the house's creation in 1872 by Edouard Normandin's great, great grandfather, Jules Normandin.
Normandin Mercier cognacs are matured in the family chateau’s traditional cellars near the town of La Rochelle, the historic medieval port that made Cognac famous many centuries ago. The proximity of the ocean, the natural regulation of hygrometry and oceanic temperature all favor the ageing of the cognacs, giving them fullness, elegance and a unique character.
Islay Single Malt Scotch Whisky | Port Ellen, Islay / Scotland
Size: 750ml | Non Chill-Filtered
Ardbeg is one of Islay’s most legendary distilleries — a remote, windswept outpost on the southern shore of the island that has been producing some of Scotland’s most intensely peated single malts since 1815. For devotees of smoky whisky, Ardbeg is a pilgrimage destination; for everyone else, it is a revelation.
An Oa (pronounced “an-OH”, named for the Oa peninsula at Islay’s southern tip) is the most approachable expression in the Ardbeg range — and the most deliberately rounded. Its singular character comes from time spent in a bespoke oak Gathering Vat, where whiskies from multiple cask types — sweet Pedro Ximénez, spicy virgin charred oak, and intense ex-bourbon — are brought together to harmonize before bottling. The result is Ardbeg’s hallmark peat and dark chocolate, mellowed by a delectable smooth sweetness: aniseed, silky butterscotch, black pepper, and clove, rising to an intense crescendo of flavor. Non chill-filtered, as it should be.
“A dram with smoky power, mellowed by a delectable, smooth sweetness. Hallmark Ardbeg peat, dark chocolate and aniseed are wrapped in smooth, silky butterscotch, black pepper and clove, before rising to an intense crescendo of flavour.”
— Ardbeg Distillery
Casks: Pedro Ximénez · Virgin charred oak · Ex-bourbon · Gathering Vat finishing

Crème de Moka is the earliest and most historic style of Coffee Liqueur, with recipes dating back to the 18th Century. The term “Moka” is in reference to the famous Port of Mocha, which was the major trading place of Coffea Arabica from the 15th Century through the early 19th Century.
Many European companies set up trade offices at the port, and the term “Moka” was coined as the gold standard to describe the very finest of arabica coffee beans.
The recipe that inspired Tempus Fugit Spirits’ Crème de Moka dates back to 1755.
Milk: Pasteurized goat's milk (Saanen breed)
Producer: Fromagerie l'Amuse / Cooperative dairy in Zijerveld, Netherlands
Affinage: Aged approximately 18 months
Style: Aged Gouda
Origin: Netherlands
Betty Koster founded Fromagerie l'Amuse in Amsterdam in 1989 alongside her husband Martin. A destination for serious cheese lovers, l'Amuse is celebrated for its rare, small-production Dutch gems — among them Wilde Weide and Terschelling. Betty's decades-long relationships with Dutch farmers, cheesemakers, and opleggers (affineurs) grant her access to an unparalleled range of wheels, selected and aged to her exacting standards.
"Black Betty" — also known as Brabander Reserve — is the crown jewel of that cellar. Pressed from the milk of Saanen goats and aged far beyond the typical Brabander, it develops a firm yet yielding paste studded with crystalline casein crunch. Layers of sweet caramel and toasted nuttiness unfold slowly, with a clean, bright finish that only goat's milk can deliver.
The reigning queen of aged Gouda, to which all others simply bow.
Pairings: Aged Riesling, Sauternes, Tawny Port, honeycomb, Marcona almonds, quince paste
