Domaine William Fèvre’s Chablis Grand Cru Les Preuses 2023 is one of the estate’s most elegant and sophisticated expressions of Grand Cru Chablis. Les Preuses is celebrated for producing wines of exceptional finesse—combining the concentration expected from a Grand Cru with remarkable freshness, floral complexity and an unmistakable mineral character.
William Fèvre owns approximately 2.5 hectares in Les Preuses, divided between two distinct parcels. One lies on the flatter, south-facing portion of the vineyard, while the second is planted on deeper soils. Together they create a wine that beautifully balances richness and texture with the tension, precision and minerality for which the climat is renowned.
The vineyard’s clay-rich soils over limestone help retain moisture while maintaining excellent drainage, contributing both concentration and freshness. William Fèvre’s restrained approach in the cellar, including careful use of older French oak, keeps the vineyard firmly at the center of the wine.
The 2023 Les Preuses opens with a beautifully expressive bouquet of lemon zest, citrus oil and ripe orchard fruit, joined by white flowers, subtle orange peel and delicate smoky notes. With air, distinctly Chablisienne nuances of oyster shell, flint, chalk and sea spray emerge.
On the palate, the wine is both round and beautifully precise. There is impressive depth and concentration, yet the texture remains graceful and finely etched. Bright citrus and white fruit are carried by vibrant acidity, while layers of crushed stone, chalk and marine minerality provide remarkable tension.
The finish is exceptionally persistent, stony and saline, leaving an impression of purity and effortless elegance. Compared with the broader power of Bougros, Les Preuses tends toward finesse, refinement and mineral transparency, making it one of the most graceful Grand Cru expressions in the William Fèvre portfolio.
This is a Grand Cru that can be enjoyed for its youthful energy and purity, but its structure, acidity and concentration also promise excellent aging potential.
Food Pairing
An exceptional companion to oysters, lobster, scallops, langoustines and crab, as well as grilled or roasted fish such as turbot, halibut and Dover sole.
Its combination of texture, acidity and minerality also makes it superb with roast poultry, veal, creamy seafood dishes, delicate mushroom preparations and refined butter-based sauces.
Serve lightly chilled rather than extremely cold to allow its floral aromas, texture and complex mineral character to fully develop.

Perfectly balanced, then just when you are enjoying the subtlety, you sense the huge block of central white fruit as well. Only a little bit spicy, in fact even quite juicy at the finish.
