Bright golden, almost fluorescent in the glass, it opens with a complex, layered nose of toast, smoke, mushroom, earth, pollen, and herbal tea — aromas drawn from years spent deep in López de Heredia's ancient underground caves. On the palate it is medium-bodied yet mouth-filling, with pungent, ethereal flavors, searing acidity, and a long, dry finish that ends with a distinctly salty, umami quality. Still young.
