J. Vignier’s Les Abbesses is a distinctive single-vineyard Blanc de Blancs that captures the depth, ripeness and mineral character of the Côte de Sézanne. Produced entirely from Chardonnay, this Champagne comes from one exceptional parcel in the historic village of Vindey, whose name is believed to derive from the Latin vinum dei, meaning “wine of God.”
The vineyard is planted on a unique combination of alluvial soils and silex over deep Cretaceous chalk. The flint-rich surface absorbs warmth during the day, helping the Chardonnay reach full maturity, while the underlying chalk preserves freshness, tension and a refined mineral profile.
2015 was the inaugural vintage of Les Abbesses. The wine was vinified in stainless steel to retain the purity and precision of its fruit and underwent full malolactic fermentation. It then spent 60 months aging in bottle, allowing the Champagne to develop greater texture, complexity and beautifully integrated autolytic character.
Deep and self-possessed, Les Abbesses opens with delicate aromas of white flowers, ripe orchard fruit and fresh citrus. The palate is elegant yet generous, with fine bubbles, subtle brioche notes and a focused mineral core. Its combination of richness and chalky freshness carries through a long, dry and graceful finish.
This expressive vintage Blanc de Blancs is excellent as a sophisticated aperitif and has enough depth for the table. Pair it with oysters, caviar, scallops, lobster, roasted white fish, creamy poultry dishes, mushroom risotto or soft-ripened cheeses.
