Isabelle et Denis Pommier Chablis 1er Cru Troesmes Organic 2023 750ml

From the Troesmes sub-climat of Chablis Premier Cru Beauroy, this organically farmed wine reflects the limestone-rich terroir of one of Burgundy’s celebrated white wine regions. Located northwest of the village of Chablis, within the communes of Poinchy and Beine, Beauroy encompasses three sub-climats: Beauroy, Côte de Savant, and Troesmes.

The gently sloping vineyards face south to southeast, with shallow topsoil over Kimmeridgian limestone and white clay. Isabelle and Denis Pommier farm organically and work the soils manually. Grapes are harvested into small 15-kilogram cases and pressed immediately.

Alcoholic and malolactic fermentation take place equally in tank and neutral oak barrels of varying ages. The wine then spends 18 months on its lees, with two-thirds aged in tank and one-third in oak.
