Gérard Boulay | Sancerre AOC, Loire Valley, France | Rosé | Organic | 2025
Made from 35–40 year old Pinot Noir vines on the steep clay hillsides of Chavignol — the village many consider the finest terroir in all of Sancerre — Boulay's Sibylle Rosé is one of the Loire's most sought-after small-production pours. Only 200 cases are made annually. Gérard harvests his Pinot specifically for rosé by direct press into tank, adds no commercial yeast, and uses minimal SO2, letting the vintage and the land speak for themselves. What makes the rosé one year could make red another — a true expression of place and season.

Antonio Galloni writes: The 2023 Rosé Sibylle is redolent with crushed berry fruit, rosewater, spice, mint and orange peel. Sensual and layered in the glass, the 2023 possesses lovely textural resonance to play off its effusive aromatics. It’s a gorgeous wine from Gerard Boulay. Drinking 2024 - 2026. - Vinous 90
