Encomienda de Cervera Vulcanus Orange Wine Sauvignon Blanc — Campo de Calatrava 2023
Encomienda de Cervera is one of Spain’s most singular estate wineries — a historic property with documented vineyard records dating to 1741, situated in the Campo de Calatrava, a volcanic appellation in Castilla-La Mancha that remains one of the country’s best-kept secrets. The estate’s vineyards grow on volcanic soils at 750–850 meters of altitude, cooled by mountain microclimates with cold nights that preserve natural acidity and generate exceptional aromatic complexity. This Vulcanus Orange Wine is a limited-edition single-varietal Sauvignon Blanc — just 2,900 bottles produced — and it represents the estate’s most adventurous expression. Rather than the stainless steel or concrete tank approach of the classic Vulcanus, this wine is fermented and aged for three months in French oak barrels, producing a white wine of extraordinary richness, texture, and depth. Certified organic, harvested selectively at optimal ripeness during the coolest hours of the day.
The color is a pale straw with greenish iridescence — luminous and inviting. The nose is extraordinary: ripe peach, hazelnut, coconut, vanilla, and pineapple yogurt, with the volcanic mineral undercurrent that is the unmistakable signature of Campo de Calatrava. On the palate, it is unctuous and powerful — pure cream, fresh and warm at the same time, with a peachy richness and a long, complex, and deeply satisfying finish. This is not your everyday Sauvignon Blanc. This is Sauvignon Blanc reimagined through volcanic terroir and French oak.
Sauvignon Blanc grapes from vineyards located in the Campo de Calatrava volcanic massif at an altitude of 850 meters.
Produced using the traditional method of macerating the must with the skins throughout the entire fermentation process.
In this instance, fermentation takes place with the skins, with the wine remaining in contact with them for 50 days. After racking, the wine is aged on its fine lees for at least 40 days in French oak barrels, adding complexity and elegance to its character.
