El Dorado is the flagship rum of Demerara Distillers Limited (DDL), produced at the legendary Diamond Distillery — the last remaining distillery in Guyana and the sole custodian of the country's extraordinary heritage of wooden pot and column stills. Operating in accordance with the Demerara Rum Geographical Indication, DDL is the guardian of a distilling tradition unlike anywhere else in the world, crafting rums of remarkable depth and character from the rich molasses of the Demerara River region.
The Cask Aged 3 Year White Rum is a blend of two of DDL's most prized marques: Skeldon (SWR) and Blairmont (B), both distilled from molasses in DDL's heritage French Savalle column still. The blend is aged for a minimum of three years in ex-bourbon casks under the tropical heat of Guyana, where accelerated maturation imparts warmth, roundness, and depth far beyond what is typical of the white rum category. The aged spirit is then double filtered through specialized natural charcoal, removing color while preserving the complexity and character developed during barrel aging.
Don't be deceived by its crystalline appearance — this is a white rum with genuine substance. Three years of tropical barrel aging rounds the edges of the spirit and delivers a warmth and depth that sets it apart from the light, neutral expressions that define most white rum. Versatile and robust, it is equally at home in a classic Daiquiri, a Mai Tai, or any cocktail calling for white rum with real character.
The 3 Year opens with inviting aromas of young coconut, buttered popcorn, and banana custard. The palate is oily and generous, echoing the nose with coconut and vanilla bean at the core. The finish is distinctive and lingering, with notes of wood tannin and pandan leaf — a hallmark of Demerara's unique distilling heritage.
