Vineyards & Winemaking
The grapes are harvested very early in the morning during the last ten days of September. Vinification takes place in temperature-controlled stainless steel tanks, with two weeks of maceration and daily pump-overs.

Pair with roasted red meats, game or goat cheeses. Serve slightly below room temperature.
