Winemaker Description
Made from 70+ year old vine Albariño, Named after the first Bodega Chaves vineyard located on the slope of Fornos. Their ancestors called the stony and dry land “Castel”, a prosperous enclave to grow the best Albariño grapes.
Memo Pairing Suggestions
As an Atlantic-influenced wine, it is naturally born to be paired with seafood:
-
Seafood: Steamed clams, scallops, or grilled sea bass.
-
Global Flavors: Its bright acidity makes it a fantastic partner for sushi, sashimi, or Vietnamese turmeric noodles.
-
Cheese: Local Galician cheeses like San Simón (smoked) or a mild, creamy Tetilla.

Choose when time is of the essence
Typical Albarino aromas of apple, pear, and white flowers are pretty as they set up a round and fresh palate with medium-level acidity. A pleasant mix of orange, apple, and melon flavors are nothing but solid on a lasting finish that shows a touch of minerality
The Bodegas Chavez has been producing wine from their family-owned estate since 1955 and they were instrumental in the region being recognized as a designated growing region. The Family estate is in theVal do Salnes, which is said to be the birthplace of Albariño, right against the Atlantic coast. The cool sea breeze that rolls off the ocean keeps the grapes cool through their growing period which maintains a bright freshness.
