COS is one of Sicily’s most iconic and pioneering natural wine estates, founded in 1980 by Giambattista Cilia, Cirino Strano, and Giusto Occhipinti in Vittoria, southeastern Sicily. A benchmark producer of biodynamic, minimal-intervention wines, COS was among the first estates in Italy to revive amphora and concrete-tank winemaking — long before natural wine became a global movement. Rami (“branches” in Italian) is their entry-level orange wine: a skin-contact white of remarkable character and value.
Winemaker Description
Spontaneous fermentation in concrete tanks on the skins with indigenous yeasts. Seven to ten days of skin contact. Aged in concrete vats for eight months, followed by three months in bottle before release. No additions, no fining, no filtration.
Tasting Notes
Golden-hued with aromas of ripe apricot, orange peel, chamomile, citrus fruit, and Mediterranean herbs. Saline minerality on the palate with a textured, slightly tannic structure, excellent depth of flavor, bright acidity, and a long, pleasant finish — the hallmark of great skin-contact wine.
Food Pairings
Grilled fish, sushi, mezze, roasted vegetables, aged pecorino, and spiced dishes. Equally stunning as an aperitivo. Serve slightly chilled (55–60°F).

Choose when time is of the essence
Ramì by COS is a blend of Insolia and Grecanico Dorato. For 40 years the company has been researching and pursuing an artistic form of conceiving wine, and at the same time narrating the territory, and it does it very well. Each wine is an olfactory photograph of that part of Sicily almost at the south-eastern end, where "The taste of Africa jumps on you not only with the reminiscences of the various architectures, but above all with the vegetation: olive groves, carob groves, almond groves, vineyards .
And then, the dream climate, with the colors full of red, ocher, yellow ". The grapes, harvested in September, ferment spontaneously on the skins for about a week, and the subsequent refinement of the wine takes place between cement and bottle. RAMÌ COS: THE TASTING Ramì by COS has a beautiful amber gold color; on the nose it smells of dehydrated apricot, almond, hay, citrus peel, prickly pear jelly, herbs of the Mediterranean scrub. In the mouth it is elegant, full, with a freshness that tastes of mandarin, with references to pear, and an almond finish.
