Winemaker Description
Scent of strawberries, cherries, raspberries, mushrooms and spices. The taste is mineral with a touch of smoke and forest. Healthy acid and a persistent, long finish.
The grapes are picked by hand and put in small baskets so as not to damage the fruit. The grapes are then carefully sorted by hand and before being relincted. The maceration then takes place in open wooden barrel or stainless steel tanks for 3 to 4 weeks. The casks and thoughts are punched and twice a day during the fermentation
