Created in 2001 by Monica Leyva with her brother, Rubén Leyva, Pajarote explores and shares the Mexican tradition of ponche essentially, punch but here expressed using flavors specific to Mexican heritage in the form of hand-crafted liqueurs. Tamarind, Chocolate, Guava, and Ginger lead the charge, with more flavors in the export pipeline (including a delightful Mexican take on the traditional Italian red bitter aperitif).

The spirits are made using cane distillate drawn from a traditional producer in Jalisco as a base and sweetened with piloncillo (coarse cane sugar), just as Monica’s grandmother sweetened her ponches when Monica was growing up. Following an altruistic model similar to sister-brand Mezonte, the brand also works closely with the communities from which its inspiration is drawn, sourcing ingredients carefully through ethical and sustainable suppliers.

Don Fulano Añejo is a marriage of very old tequilas aged in French limousine and nevers oak casks that previously held wines.

It’s deep and complex with dried fruits and spice elements like cardamom and allspice which complement elegantly the right touch of sweetness that comes from slowly cooked mature agave. Honey and caramelized nuts emerge from a long finish together with a refreshing light menthol.

This mezcal is crafted in the rich, fertile Miahuatlán valley, remotely located a 2.5 hours’ drive south of Oaxaca City at 4,970 ft elevation. 

The genetic “mother” of Tequila’s Blue Weber agave, Espadín typically takes 7 – 12 years to mature & is the most prolific species used in mezcal. Fósforo Tobalá Penca is a unique release that it is aged for up to three months in small glass carboys alongside a cooked agave penca slice which imparts a complex and savory flavor.

Brilliant amber in color, the nose unveils layers of complexity. Leading with young leather, caramel and spices, the complex aroma profile shows hints at white flowers and lemongrass.

On the palate, this special expression showcases an explosion of floral notes followed by toasted nuts and mellow smoky undertones. This unique Tobalá Penca expression leaves a wonderful lingering, full mouth-feel.
