67 Wine Somm Series Cava 67 Guarda Brut NV 750ml
67Wine Somm Series Cava 67 Guarda Brut — Penèdes, Catalonia | NV
The 67Wine Somm Series is our team’s curated selection of wines that over-deliver at every price point — and this Cava is a perfect example of what that means. Sourced from the Penèdes region of Catalonia and made using the Méthode Traditionnelle with the three traditional Cava grapes — Xarel·lo, Macabeo, and Parellada — the 67 Guarda Brut is aged a full year in the cellar after disgorgement, developing a complexity and finesse that punches well above its price. “Guarda” designates extended aging, and at under $14, this is one of the most compelling values in all of Spanish sparkling wine. The kind of bottle you open on a Tuesday and feel like you’re celebrating.
Pale gold with fine, persistent bubbles. The nose is fresh and enticing: white peach, brioche, white cranberry, and fresh citrus. On the palate, it is medium-bodied, crisp, and clean, with a delicate lively mousse and a refreshingly dry, elegant finish of real finesse.

The 67Wine Somm Series is a project created by our in-house buyer and sommelier, Oscar Garcia Moncada — a meticulously curated collection of high-quality, value-driven wines selected to represent the best of what the wine world has to offer at an accessible price. Each label in the series features artwork inspired by iconic New York City neighborhoods and landmarks. The color is pale straw yellow, brilliant and clear, with a constant release of fine bubbles forming a delicate crown on the surface of the glass. On the palate, varietal flavors mingle beautifully with the character of the aging process, achieving a perfect balance of fine acidity and elegance. The bubbles are very small and delicate, the finish long and harmonious. A Cava of genuine distinction.

Pares Balta Brut Nature Cava Organic NV 750ml
Parés Baltà Brut Nature Cava Organic — Penedès, Spain NV
Parés Baltà is one of Catalónia's most respected organic estates, farming biodynamically in the Penedès with a deep commitment to indigenous varieties and traditional methods. Their Brut Nature Cava is made exclusively from the classic Cava trio — Xarel·lo, Parellada, and Macabeu — with an emphasis on Xarel·lo, the most characterful and site-expressive of the three. Produced via the traditional method with zero dosage, this is a bone-dry, gastronomic sparkling wine of genuine precision and integrity — the kind of Cava that earns its place alongside Champagne at the table.
The wine pours a pale gold with fine, persistent bubbles. The nose is fresh and inviting — green apple, citrus fruit, and a subtle brioche note from the lees aging. On the palate, it's medium-bodied with a crisp, enticing mouthfeel, superb fine bubbles, and a clean, refreshing, bone-dry finish. Excellent as an aperitif, and a natural match for crema catalana — the local cousin of crème brûlée — a pairing that showcases the wine's precision beautifully.
"This might have been a classic Cava, if all Cavas were farmed organically and made with as much care. Instead, it stands out — fresh, lively and dry." — Eric Asimov, The New York Times

Ramon Canals Cava Reserva Numerada Metode Tradicional 2022 750ml
In the heart of the Penedès, the Canals family has been crafting Cava with the quiet focus of a house that has nothing to prove. The Reserva Numerada is their flagship expression: a blend of Xarel·lo, Macabeu, and Parellada — the three indigenous varieties that define the appellation — fermented in bottle via traditional method and aged on the lees for a full 24 months. The result is a Cava of genuine complexity, one that bears its accolades without surprise. This is also an organic transition wine, farmed with care in the vineyard before the glass.
The 2021 pours a bright, luminous straw with fine, persistent bubbles. The nose is delicate and layered: citrus fruit — lemon, tangerine, orange peel — opens to orchard notes of green apple and ripe pear, with a whisper of brioche and subtle minerality from the extended lees aging. On the palate it is crisp and dry, with white peach, lime, and a pleasant bready character that adds texture without weight. The finish is refreshing, vibrant, and long. An exceptional value in serious sparkling wine.

Pares Balta Cava Rose PINK Organic NV Brut 750ml
Pares Balta Cava Rose PINK Organic NV Brut · Cava, Catalonia, Spain
Family Winery
We are a family winery with a long tradition of winemaking with origins stretching back to 1790, when the first vineyards were established on our estates in the Penedès, situated a short journey of just 30 km from the Mediterranean coast and Barcelona.
Our aim is to care for our vineyards in the best way we know to create organic wines and cava (Spanish sparkling wines) full of expression and the essence of our land. Land that for centuries has been dedicated to the cultivation of the vines.
Organic and Biodynamic Farming
Our passion for nature has always been the primary driving force to grow our vines organically, certified since 2002, and biodynamic since 2012.
Our estates benefit from a rich biodiversity thanks to the different cultivation and fertilization methods that we practice. We have our own flock of sheep to fertilize the soil and feed the land. We carefully tend to and employ our own bee hives to take care of the pollination process and help us to reinforce the Mediterranean.
Women Winemakers
The wives of Joan and Josep Cusiné, third generation of the family, were the winemakers of the family winery for more than 20 years. María Elena and Marta arrived at the family winery around the year 2000 after studying oenology at the University of Tarragona. Their arrival brought about a change in ideas and caused a revolution in the winery by innovating and experimenting with different varieties and winemaking methods. By combining innovation with tradition, they managed to make organic and biodynamic wines and sparkling wines full of character and expressiveness, capable of generating emotions.
Marta Casas, elected Best Winemaker of the Year 2024 by Master of Wine Tim Atkin, currently heads the winemaking department along with her husband Josep and brother-in-law Joan.
