Winemaker Description

We create the conditions for making Late Harvest Zinfandel by allowing the grapes to hang on the vine approximately 3--4 weeks after they normally would be picked for a dry wine. These grapes were picked on October 30th on a beautiful Fall day, and the grapes arrived at the winery at 40° Brix of sugar. We crushed the grapes into a small 1,500-gallon tank and as is our tradition at Dashe Cellars, we fermented the grapes naturally, using the native yeasts that naturally live on the skins of the grapes. We let the grapes macerate to gain color and flavor, and then allowed the tank to warm.

The fermentation took off quickly, and then naturally halted when the alcohol had reached about 15.5% and the sugar level was about 9%. We always allow the wine to achieve its balance of sweetness and alcohol naturally, by letting the fermentation finish on its own.

The wine was aged in older French oak barrels so as to not overpower the intensity of the fruit. We bottled the wine as soon as possible to maintain its fresh fruit flavors and conserve its sweet concentration and purity. The wine is unfined and received minimal handling to the bottle.

This wine is generous and complex with aromas of cherry cola, cassis and chocolate. Some savory notes and hints of citrus zest and mint. This wine is intensely aromatic and develops in the glass as layers are revealed. This full-bodied wine is powerful yet exhibits grace and finesse. A rich and dense mid-palate evolves into a muscular and graceful finish.

Tasting Panel 100 Points | Awe-inspiring, with dramatically structured tannins, this wine possesses an opulence matched by its seductive texture of soft suede as well as its grip. Blueberry and pomegranate are intense and showy on the finish.

Vinous 95+ Points | The 2021 Cabernet Sauvignon Tomahawk Vineyard emerges from the youngest block on the vineyard, planted nearly twenty years ago. Readers will find a pure, voluptuous wine that is immediately engaging. Succulent dark cherry, plum, espresso, licorice, incense and new leather fill out the layers effortlessly. I imagine the Tomahawk will require only modest cellaring.

Jeb Dunnuck 95 Points | The 2021 Cabernet Sauvignon Tomahawk Vineyard is slightly brighter and more perfumed than the Ganymede, offering a brilliant array of crème de cassis and black raspberries as well as spicy oak, graphite, and spring flower notes. It has classic Stags Leap vibrancy and complexity, is medium to full-bodied, and has plenty of polished tannins as well as a great finish. It deserves 4-6 years in the cellar, and I suspect this will be very long-lived. It's a gorgeous wine that shows the style of the vintage to a T.

Decanter Magazine 94 Points | From a small group of vines at the southern edge of the Stags Leap District estate property called Tomahawk Vineyard. A very pretty and elegant wine with fantastic blackberry fruit nuanced by white pepper, sage, and iron-volcanic minerality. Medium to full-bodied with juicy mixed berry fruits, very fine tannins that have a granularity, which builds with intensity before getting wiped clean away by rather scintillating acidity that has a crisp, citrusy quality. Long, lean, and focused, with hints of bay laurel on the finish. A really lovely effort.

James Suckling 94 Points | Notes of ripe blackcurrants, blackberries, pinewood, grilled herbs and spices. Full-bodied, dense and structured with very fine, velvety tannins.

Wine Spectator 93 Points | Juicy, solid and focused in feel, with a core of black currant and blackberry preserves backed by licorice and singed apple wood notes, plus a hint of sweet tobacco through the finish. Drink now through 2040. 1,289 cases made.

Located at 1000 to 1200 ft., the vineyard overlooks upper Chiles Canyon and remnant walls of the grist wills built by pioneer J.B. Chiles. Brooding dark purple plum raspberry flavors dotted with sage and black peppercorns.

95 Points Robert Parker | Black cherries, dark loam and cassis appear on the nose of Dalla Valle's 2020 Cabernet Sauvignon Estate, joined by hints of cedar and vanilla. It's medium to full-bodied, firm, tannic and sturdy but essentially ripe, with a softness to its structure that suggests early accessibility. The long, mocha-tinged finish lingers elegantly, a delicious capstone to a super wine.

94 Points Jeb Dunnuck | The 2020 Cabernet Sauvignon is a solid step up, boasting a deep purple color as well as a brilliant bouquet of crème de cassis, graphite, liquid violets, and nicely integrated background oak. A blend of 80% Cabernet Sauvignon and 20% Cabernet Franc, it hits the palate with medium to full body, ripe, polished tannins, and a great finish. It's up with the top wines I've tasted in the vintage.

93 Points Wine Spectator | This has showy violet, boysenberry and sweet bay leaf notes that leap to the fore, with good juicy energy tucked inside the core. Offers nice flow on the finish, which picks up a loamy accent while the fruit keeps the upper hand. Drink now through 2035. (2020).

2019 embodies classic Hillside Select richness, vibrancy, and balance. The aromas push out of the glass, offering black cherry, cedar, cassis, and juicy red summer berries with lifted floral tones. Even at this youthful age, the complexity of the vintage is striking, merging dark fruit with tobacco, espresso, black olive, red plum, and black tea. All Cabernet Sauvignon from hillside vineyards on the eastern side of Stags Leap, it offers a vivid purple hue as well as extraordinary notes of cassis, black raspberries, violets, camphor, and spring flowers, with perfectly integrated background oak. Full-bodied but not massive, it’s flawlessly balanced on the palate and has ultra-fine tannins, a seamless, elegant mouthfeel, and a great, great finish. It’s another 30- to 40-year wine from this incredible team that readers will absolutely love. (2019).

98+ Points Robert Parker | Sourced from specific blocks of estate-grown fruit, the 2019 Cabernet Sauvignon Hillside Select is another highly successful vintage. All Cabernet Sauvignon aged 32 months in 100% new French oak, it boasts intense aromas of pencil shavings, dark loam, cassis and plum on the nose, while the palate is full-bodied, super-ripe, rich, dense and concentrated—a truly impressive California vin de garde. Tannic but ripe, it finishes long and firm on the finish, adding a hint of mocha. To be released in September 2023, it's a strong showing and hopefully an indication that quality will remain high under the new ownership. (2019).

98 Points James Suckling | A beautiful nose of pitted cherries, redcurrants, fresh herbs and violets. Full-bodied with fine, structured tannins. More gravelly, mineral and dark than the nose lets on. Savory almost. Terrific depth and concentration that keeps the palate flavorful through the generous finish. Chocolate, sage, rosemary, bark and moss. Layered. Superb wine. Needs time to come together. Best after 2024 and onward. (2019).

98 Points Vinous | The 2019 Cabernet Sauvignon Hillside Select is one of the most elegant wines I have tasted at Shafer. Effusive aromatics and silky tannins are immediately captivating. Crushed red/purplish berry fruit, mint, spice, lavender and licorice are all finely knit. We will see, but the 2019 may very well represent a new direction for Hillside Select, one of Napa Valley's most iconic Cabernets. (2019).

97 Points Wine Enthusiast | This broad, rich and mouthfilling wine is Shafer’s most elite and collectible. Aged for 32 months in all-new French oak barrels, it boasts extra-ripe blackberries and blueberries, accents of mint, cedar and graphite, and a big structure of polished tannins. (2019).

94 Points Wine Spectator| A ripe, exuberant style, with generous plum cake, blackberry compote and açaí berry notes mixed with melted black licorice and a nicely polished, singed mesquite–accented finish. Wine Advocate 92 Points | The 2018 Cabernet Sauvignon Suscol Springs is blended of 85% Cabernet Sauvignon and 15% Merlot. Deep garnet-purple in color, exuberant notes of fresh blackberries, boysenberry preserves and blackcurrant pastilles rocket from the glass, followed by hints of sautéed herbs, forest floor and black olives. The medium to full-bodied palate is intense and energetic, featuring finely grained tannins and a refreshing backbone, finishing long and lifted.

The 2018 Blank has a beautifully layered dark nose of black cherry, aromatic black tea, blackberry bramble, rose oil, black licorice, and violet candies. The silky entry opens to flavors of black fruit, culinary bay, and bakers’ chocolate seamlessly underpinned by velvety tannins and lovely texture through to the finish. This wine will age effortlessly for at least 20+ years.

Jeb Dunnuck 95 points | I was able to taste two wines from Grace Family both made by the incredibly talented Helen Keplinger who has been at this estate since 2014. The 2018 Cabernet Sauvignon Blank offers a beautifully pure elegant style in its darker currant and blueberry fruits as well as notes of iron minty herbs tobacco and lead pencil. Soft supple medium to full-bodied and as seamless as they come drink this singular beauty any time over the coming 20 years. I love its mid-palate as well as its tannins.

James Suckling 98 points | So much graphite and dark fruit here with some iron and spice. Lead pencil, roses and light mint, too. Full-bodied and wonderfully seamless with dusty tannins and a lightly balsamic finish. Drinkable now, but better after 2025. 

Wine Spectator 93 | A nice burst of mulberry and loganberry fruit leads the way, with licorice, black tea and violet notes playing supporting roles. Sleek and refined through the finish, with sneaky depth. Drink now through 2033

Jeb Dunnuck 90 Points | Lastly, this estate fashioned a solid 2018 Cabernet Sauvignon Mohrhardt Ridge Vineyard, which comes from the Fort Ross-Seaview appellation, and you don’t see many Bordeaux varieties from this region. This inky-hued beauty offers lots of cassis and blueberry fruit as well as sappy green herbs, tobacco, and subtle cedar-like aromas and flavors. It’s medium-bodied and has ripe, building tannins, good overall balance, and a solid finish. It will benefit from another year or three of bottle age and should drink nicely for a solid decade. (2018).

Vinous 94 Points | The 2018 Cabernet Sauvignon Mohrhardt Ridge Vineyard is another super-distinctive wine in this range. A Cabernet of tremendous character and nuance, the Mohrhardt speaks with distinction. Rich, red berry fruit, rose petal, mint, spice and cedar infuse the Cabernet with striking inner sweetness and perfume. The 2019 feels unctuous and luxurious in the glass, and yet it has plenty of mountain savoriness. The Cabernet has so much sheer personality.  -- Antonio Galloni  (2018).

The wine is rich in mineral and citrus flavors and reminds us of what great white Burgundy tastes like!

The high-altitude, north-facing Scopus Vineyard harnesses a blend of lush California flavor tempered with cool-climate structure hanging on firm acidity and moderate body. Stone fruit, citrus and spice come to mind on the palate, all marked by the vineyard’s classic mineral core. There’s a modest hint of toasty oak framing the ensemble, which ends long and fresh.

93 points Wine & Spirits | 2022 marks the fourteenth vintage for Covenant® Chardonnay Lavan®. The wine is made from grapes grown in a small vineyard on Sonoma Mountain. Jeff began working with this vineyard -- called Scopus -- back in 2010, when he made some Chardonnay for the vineyard's owners. He liked the wine so much, that he decided to make Scopus Vineyard the core of our Lavan® program the next year.

Winemaker Description

The blend is dominated by the Estate Vineyard, yet the significant percentage of Walker—Kanzler's Green Valley vineyard—bends the wine in an exciting red-note direction: hibiscus, rhubarb and red licorice. The aromatics deliver fresh berries, cola, white pepper and pine sap. Fig notes emerge on the palate with a spicy, black tea finish. Modest whole cluster and slightly more new oak make the wine soft and approachable, while bright acid keeps it fresh, juicy, and well-knit.

This wine’s aroma has it all: plums, incense, tobacco leaf, violets, and exotic spices. Zero racking and extended lees contact has given the 2011 FUTO a satisfying balance of creamy richness and superb freshness. Robert Parker's Wine Advocate 97 Points: The 2011 Proprietary Red Estate is a blend of 74% Cabernet Sauvignon, 11% Cabernet Franc, 9% Petit Verdot and 6% Merlot. A top success for the vintage, it should drink well for 10-12 years.

Our 2011 Napa Valley Cabernet Sauvignon is an elegant representation of Napa Valley Cabernet from a cool vintage. It presents an opaque garnet hue in the glass and reveals aromas of sandalwood and roasted meats.

Flavors of vanilla, coffee beans and raspberries are buttressed by dusty tannins, firm acidity and a mouth-coating texture. Given proper cellaring, this wine should provide drinking pleasure through 2029.

Our 2013 Napa Valley Cabernet Sauvignon is dark ruby in color and entices you with a nose of raspberry, cassis and loose pipe tobacco. This full-bodied wine has an assertively silky structure and is notably spicy on the palate. Flavors of sage and blackberry mark the wine’s entry. The strong acidity in the mid-palate is followed by a lingering finish. Given proper cellaring, this wine will provide drinking pleasure through 2038.

Wine Advocate 96 Points | More elegant and refined than the Napa Cab, the 2019 Insignia features restrained cedar and vanilla notes (despite spending two years in 100% new French oak) and delicate herbal shadings accenting cassis and black cherry fruit. Full-bodied, velvety and somewhat open-knit on the palate, it turns plush and long on the finish, adding a touch of warmth. Production this year is approximately 17,000 cases, reflecting the increased volume coming from recently replanted vineyards. It's remarkable what a good job they continue to do with this bottling year after year, without compromising on quality.

Jeb Dunnuck 99 Points | Another beautiful wine from this team, the 2019 Insignia is mostly Cabernet Sauvignon but includes smaller amounts of Merlot and Malbec, brought up all in new barrels, sourced from seven estate vineyards. It has a classic varietal and incredibly complex nose of crème de cassis, freshly sharpened pencils, green tobacco, and damp earth, with a kiss of background sappy spring flowers. Seemingly from a cooler year with its freshness, vibrancy, and herbal, floral character on the nose, it's nevertheless full-bodied and beautifully concentrated on the palate, with ultra-fine tannins, a seamless, layered mouthfeel, and a gorgeous finish. Unquestionably up with the finest vintages of this cuvée, this is legit awesome juice that’s going to offer incredible pleasure over the coming 20-25 years. Hats off to winemaker Ashley Hepworth.

James Suckling 98 Points | A very aromatic Insignia with pencil-shaving and graphite highlights to the dark fruit and blackberries. Full-bodied yet tensioned and vertical with very fine tannins that run deep and layered in the wine. Needs time to come together but fantastic tension and structure. Try after 2027.Vinous 96 points The 2019 Insignia is a bold explosive wine. Sumptuous dark fruit mocha leather sweet spice and tobacco are all amplified in an Insignia endowed with tremendous textural intensity and plenty of soft contours. I imagine the 2019 will age well for years but it will also drink well with minimal cellaring.
  

Heitz Cellar Quartz Creek Vineyard Chardonnay — Napa Valley 2021

Heitz Cellar is one of Napa Valley’s founding estates — and the Quartz Creek Vineyard Chardonnay is its sole white wine, making it one of the most singular and sought-after expressions of Napa Chardonnay. The fruit comes from the Burgess-owned Quartz Creek Vineyard in Oak Knoll, a cool sub-appellation at the southern end of the Napa Valley where the influence of San Pablo Bay moderates temperatures and extends the growing season. The 2021 vintage was shaped by drought and a cool, long growing season that dramatically reduced yields — and concentrated everything that remained. The result is a Chardonnay of exceptional intensity, harmony, and cellar-worthiness: a step up even from the celebrated 2020.

The color is a luminous pale gold. The nose opens with effusive floral top notes, followed by cool, almost mentholated aromas of concentrated lime essence, lemon curd, white pear, and a whisper of toasted cashew and crushed stone. On the palate, it is medium-bodied and linear — silky and creamy in texture, with gorgeous finesse and a taut, focused structure.
