Assemblage 1 introduced Richard Geoffroy's vision for IWA: a sake grounded in Japanese tradition but deliberately unconventional in its pursuit of balance between aroma, palate, texture and finish.

Complex and layered, Assemblage 1 combines restrained richness with an unexpectedly weightless feel. Its aromatic profile leans toward deeper, darker tones than one might expect from Junmai Daiginjo, while the palate is beautifully composed, savory and persistent. Subtle fruit and vegetal notes evolve toward spice and wood as the sake warms, eventually revealing more bitter, saline and umami-driven dimensions with suggestions of iodine and licorice.

Assemblage 1 uses Yamada Nishiki, Omachi and Gohyakumangoku rice, five yeast strains, predominantly traditional Kimoto methods and reserve sake components. It is a Junmai Daiginjo with no added alcohol; its classification is based on a 50% polishing rate for the least-polished component.
