We start with a mashbill of 95% premium rye and age it for over two years in new charred oak barrels. Once properly aged we bottle it at a bold 92 proof - perfect to stand up on its own in any cocktail or by itself in your favorite glass.
We bottle in small batches which allows us to leave the whiskey in the barrels longer for the most flavor and color. We empty the barrels and filter for particles, cut it down to 92 proof and bottle it immediately so that the most flavor from the barrel makes it into the bottle. We then mark each bottle with the batch and bottle number by hand -

Winemaker Description
Zesty, mineral, citrus, salty and solid, with ample fruit. This is not a retiring white. In the mouth it is balanced, with notes of peaches, green apples, and tropical fruit. Even with it's structure is has a soft texture in the mouth followed by a very clean tangy finish.
Benito Santos is a central figure in the modern history of Albariño and the Rías Baixas D.O. He began working in his grandfather’s vineyards in the 1930s and made wine for serving in his bar – wines that repeatedly won prizes in the annual Fiesta de Albariño in Cambados. He was instrumental in the creation of the Rías Baixas D.O. in the 1980s. The current owners now farm three vineyards in the Val do Salnés subzone of Rías Baixas, each of which is next to and named after an ancient church: Saiar, Bemil, and Xoan. All of the vineyards are now certified organic – a rarity in rainy, mildew-prone Rías Baixas – and winemaking uses only native yeasts and minimal sulfur. Benito Santos wines are salty, mineral, and structured, with ample fruit but none of the overly tropical flavors of many industrially-produced Albariños.

Only after another year on the bottle does the Amarone leave the Zenato family winery on Lake Garda.
The Amarone della Valpolicella Classico from Zenato is made from grapes from the classical Valpolicella region and is the jewel in the wine production of the Zenato family.
This Italian red wine presents itself dark red, almost black in the glass. It overwhelms in the best way with voluminous elegance, dense, multi-layered aromas and a beautiful balance of fruit and tannin. A phenomenal length makes this Amarone irresistible.
