Gran Bassano Bianco is a vermouth based on Vespaiolo, white wine from native grapes of the DOC of which the city of Bassano is part. Vespaiolo features characteristic floral scents that attract the wasps (vespa), from which it is named. The original aromatic identity of Gran Bassano Bianco is due to a balanced infusion of over twenty botanicals, among which stand out hawthorn and elderflower, characteristic plants from Bassano area, as well as grapefruit, galangal, myrtle, sweet and bitter orange. This historic brand of fig brandy, has been made by a Tunisian family whose business was established in 1870. Made with figs from the Mediterranean, this can be enjoyed on its own or in a range of cocktails.

It twas first created by the Bokobsa family at their distillery in Tunisia in 1880. This kosher eau de vie is made from distilling the finest Mediterranean figs – specifically from Turkey and Tunisia.

It is widely considered to be the national drink of Tunisia. Made from distilling Tunisian figs, is a smooth eau de vie, with complex flavors of fig, raisin, cinnamon, and layers of interesting flavors.

The Bokobsa family has been producing kosher spirits since 1870. Around 1880, in his distillery of La Soukra, in Tunisia, they invented Boukha, a spirit made with the finest Mediterranean figs.

In 2010, WhistlePig Straight Rye Whiskey was released to great critical acclaim. Though the whiskey is new, the WhistlePig farm has a long history. Revolutionary War veterans cleared much of the surrounding forest to settle and farm following the war. The land was nearly continuously in cultivation until a dairy farm shuttered its windows in the early 2000s. In 2007, Raj Peter Bhakta purchased the farm, which is certified organic, and now raises cattle, horses, sheep, goats and pigs. The fields yield alfalfa, rye, barley and oats. WhistlePig is 100 proof, 100 percent rye whiskey and aged for at least ten years in new American oak and Bourbon barrels. 100% Macabeu is fermented at low temperatures. Green walnuts, herbs and spices are sourced locally from the Matarrana area and macerated in the wine. The whole concoction is then aged for up to six months in a solera before being bottled in one of the coolest looking bottles on the market.

Vermouth is a fortified, aromatized wine; the ingredien ts are wine, herbs and plants, grape spirit and sugar. The practice of aromatizing wine dates back to the Ancient Greeks. This was formerly done to mask poor wine, or as later to add extra complexity to something already good. It also proved to be an effective form of early, homeopathic medicine. Right up until the 20th century, doctors regularly prescribed Vermouths and aromatized liqueurs for all manner of illness, and many people continue to take a glass per day for medicinal reasons.

The process chez Dolin begins with purchase of base wine, always white, light in alcohol (10% by volume), and as neutral as possible, both on the nose and palate. To this is added a selection of herbs and plants, which are left to macerate several months. The exact recipes are a closely guarded secret, but there are up to 54 different plants used, most notably wormwood, but also hyssop, camomile, genepi, chincona bark and rose petals. The aromatized wine is then lightly sugared, to less than 30 g/l for the Dry and 130 g/l for the Blanc and Rouge.

The color of the Rouge does not come from red base wine, which is unsuitable for elegant Vermouth, and instead comes from the particular plants used, and from sweetening with dark, caramelized sugar. Finally, the Vermouths are fortified - up to 16? for the sweeter styles for the Dry. Chamberyzette is made with the addition of a juice of wild strawberries from the Alps and fortified. The final, 90 proof product is formulated by mingling, not blending, two and sometimes three of the distillates to ensure consistency in the nose and taste.
