Our bourbon starts with the native Kentucky climate and soil in which our corn and rye are grown, and a pristine limestone watershed rich in calcium and magnesium. These local ingredients are distilled and aged for four to six years in American white oak barrels. Because we want to create a genuinely unique spirit, we age it for three to six additional months in hand-selected port casks to create an exceptionally smooth and nuanced bourbon.

Named for the "angel's share," the portion that evaporates from the barrel during the aging process, this golden amber spirit is finished in Port barrels, which explains those juicy red-fruit notes that slide into the long finish. Noilly Prat Original Dry Vermouth is a classic vermouth that perfectly balances herbal complexity with a clean, dry finish. Its nuanced flavors make it an excellent choice for both sipping and as a key ingredient in classic cocktails like the Dry Martini.

Pale golden color with a slight greenish hue, reflecting its freshness and herbal character. The aroma is complex and inviting, with pronounced herbal notes of chamomile, mint, and marjoram. Subtle hints of citrus peel, dried herbs, and a touch of sea breeze add depth and intrigue.

On the palate, Noilly Prat Original Dry is smooth and well-balanced. The herbal notes dominate, with flavors of thyme, chamomile, and marjoram complemented by a delicate citrus zest. The mid-palate offers a touch of green apple and white peach, providing a pleasant fruity counterpoint to the herbal intensity.

The finish is long and dry, with lingering notes of herbs and a slight salinity that leaves a refreshing, clean aftertaste. 

Aviation is distilled using a proprietary maceration recipe that produces a pure medley of botanical flavor.

STEP 1: INFUSION
It all starts with our precise blend of botanicals – cardamom, coriander, French lavender, anise seed, sarsaparilla, juniper, and two kinds of orange peel. The botanicals are suspended in a neutral grain spirit for 18 hours in macerating tanks.

STEP 2: DISTILLATION
The macerate is then pumped into a still along with pure water. Steam jackets heat the macerate, the vapors go into the condenser, which cools the vapors to form the gin distillate.

STEP 3: THE CUT
In a meticulously monitored process, the first fluid leaving the still, the "heads," is removed. Collecting the "heart of the spirit" throughout the run, the distillers then determine the end of the cycle and make the final cut, "the tails." This process takes approximately 7 hours and at this point, the "heart cut" is 142 proof.

STEP 4: BLENDING & BOTTLING
The "heart cut" is transferred to a blending tank where pure water is added, bringing the gin to the desired 84 proof. It is then sent to the bottling line for filling, capping, and labeling. Aviation is then packed into boxes and ready to ship.
