The soil is made of clay, limestone and white chalk. Fermented at low temperatures slowly for 20 days. Indigenous yeast. Aged in tank for 6 months.

Chewy and sharply focused in the mouth, offering well-concentrated strawberry, bitter cherry, blood orange, honeysuckle and smoky mineral qualities and a deeper suggestion of nectarine.
