It is farmed organically. The grapes are picked based on natural acidity, flavors, and visual signs in the vineyard.
Once in the cellar the grapes are pressed, juice collected and barreled down to ferment with native yeast in old french oak barrels. The wine is aged on its lees for 17 months before being racked for the first time to bottle, unfined & unfiltered.
