Ver Sacrum (Sacred Spring) GSM is from the Uco Valley about 2 hours drive from Mendoza into the higher mountains. GSM is a blend of Grenache, Syrah and Mourvèdre or Garnacha, Syrah and Monastrell whether you use French or Spanish names for the grapes. The blend produces a wine that is leaner and "Rhone like” very different from the Malbecs produced in Argentina.
70% Grenache Noir, 15% Syrah, 15% Monastrell co-fermented. A cool, semi-carbonic maceration lasts 8 days. Fermentation in a 3,000-litre raw-concrete egg-shaped fermenter with no skin contact. Ambient yeasts only. 50% of the wine is aged here on its lees, the other 50% is aged in third-use French oak for 6 months. 8 months in bottle before release.

Amanda Barnes writes: Pale cherry in colour, Ver Sacrum takes a delicate approach to their GSM blend which sings with notes of wild strawberries, tarragon and cherry blossom. This wine is a field blend of Grenache Noir, Monastrell, and Syrah all co-fermented. The nose is earthy and muddled with hints of blackberry and cherry luden with under notes of forest floor, fungi, tea leaf, thyme, and candied leather. The palate is juicy and lush with black fruits, currant, and fine grained tannins that lead to a light finish of clove and cinammon.
Joaquin Hidalgo writes: The 2021 GSM is a field blend of 70% Garnacha, 15% Syrah and 15% Monastrell from Los Chacayes in the Uco Valley. The grapes were harvested together in one row, and 50% of the wine was aged for six months in French oak barrels, while the remaining 50% went into concrete vats. Garnet-red with a brick-dust sheen. The nose shows strawberry and herb hints with a subtle layer of oak. Juicy and vibrant, the tannins are taut and reactive, creating a tart palate before the lingering, saline finish.
