On the nose, classic notes of vanilla, caramel, cinnamon and spice prevail, before a silky, alkaline mouthfeel comes to the fore with rye spice, cinnamon, ground black pepper and smooth caramel notes, before a buttery finish that brings subtle spice, toffee and oak. This mezcal is crafted in the rich, fertile Miahuatlán valley, remotely located a 2.5 hours’ drive south of Oaxaca City at 4,970 ft elevation.

The genetic “mother” of Tequila’s Blue Weber agave, Espadín typically takes 7 – 12 years to mature & is the most prolific species used in mezcal. Terroir and the maker’s hand mean that Espadín styles vary greatly. Vago Espadín by the very modest Emigdio Jarquín was awarded Double Gold & the coveted “Best Mezcal” at the 2019 SFWSC and “Best Mezcal in the World” in the 2020 World Tequila and Mezcal Awards. This vsop is a very classical of our style based on a blend of the two areas ‘fins bois’ and bons bois’. 40% abv colour: pale gold shiny nose: at the beginning the nose seems almost ‘hidden’ then gradually there is an impression of extreme smoothness with tea aromas. Mouth: the mouth is full of fruit ( mango) with a final smooth touch. Easy to drink this cognac combines the qualities of an after dinner drink and a cocktail base. 

The tepache tastes much like apple cider... tart and delicious. The swarms of bees waste no time on people, preferring instead the drunken bliss of sipping the tepache that is available freely to them. After the juice is squeezed from the cane, the cane fiber is folded into bundles that are then submerged and held under the bubbling tepache with rocks. Distillation is done in copper—a still that appears as if it could give way to fatigue any day now, but which Juan told me is sixty years old. It is held together by faith, as much as by its rivets. Here, sixty years is not a long time.
