The 2021 vintage was also quite hot, following 2020, but these 20-year-old vines have deep roots and Vermentino tends to love sunny, coastal growing conditions. There is some brief skin contact (lasting 24 hours) and dry ice is used to maintain low temperatures and protect against oxidized flavors.
