Zinfandel Wine

If there is a single grape variety that is most closely identified as "California", it's Zinfandel. While genetic testing has shown it to originate in Croatia (Crljenak Kaštelanski) and probably arrived in the United States from Italy (Primitivo), California is home to Zinfandel. Zinfandel is a red grape. The color is all in the skin, as with most red wine grapes. The semi-sweet version known as "White Zinfandel" is pink, with the slight color coming from brief contact with the skins. The red wine receives a fairly standard treatment.

The red wine is generally quite robust and spicy, with the flavors varying depending upon the ripeness of the grapes at harvest. The primary fruit flavor is raspberry. In cooler areas (and vineyards picked early) this shows as fresh red raspberry, with excellent balancing acidity. In hotter areas, the fruit flavors tend more toward black raspberry and blackberry jam, with lower acidity that reveals a wine that tastes sweeter, even if it is fermented dry. Secondary flavors tend toward red spices, like cinnamon, nutmeg, allspice and clove. It can also show some anise and black pepper.

Zinfandel vines remain productive for longer than many other varieties; over a hundred years in many cases. The vines were planted in 1998 using St. George roots and grafted with budwood selected from an old-vine Zinfandel vineyard on Mt. Veeder called the Brandlin Vineyard. The vines are spaced 6.9' x 5', cordon-trained and spur-pruned. A vertical trellis system supports the cordon and the canopy.

Mt. Veeder’s Brandlin Ranch was planted in 1926 with a Zinfandel which produces complex, intense fruit. The character of this mountain fruit was very interesting to George. In the early days of winemaking at Hendry, he made an arrangement with the vineyard’s owner to tend the vines in exchange for the fruit. When the vineyard was sold, George was able to obtain budwood from the gnarled old vines, which he then grafted onto rootstock in Block 28, where we’ve grown it ever since. The character of the fruit remains distinct from our other Zinfandel and Primitivo cultivars.

In 2021, bud break in Block 28 occurred April 7th. Bloom was May 24th. Or to that sense of optimism on a spring day when I first visited San Francisco in 1984, to pitch this magazine on publishing services. I didn’t know at the time that I would still be publishing it 40 years later, and I didn’t know how much California wine would change. Or how little the style and intention of Geyserville would change. The team at Ridge manages the vineyard’s generations of vines to produce complex wines like this perfectly ripe 2021, with its dark, resinous scents of marijuana, its deep layers of rich fruit and the fruitiness of detailed tannins. Over the old “party line” phone system, the code words “a Black Chicken” signified a jug of bootleg wine, keeping nosy neighbors and the authorities from finding out about Aldo’s underground Zinfandel operation. Legally produced since 1999, Black Chicken Zinfandel pays homage to the industrious patriarch of the Biale family and the prominence of Zinfandel in the history of Napa Valley.

The heart of Black Chicken is sourced from vineyards in the Oak Knoll District — among them the same family vineyard Aldo, Nonna, Bob, and the Biale family have farmed since the 1930s. Several years of drought were erased in a single season as rains began just after the 2022 harvest and continued through spring 2023. Ample groundwater and cool temperatures delayed budbreak until April, with flowering in mid-May. Moderate temperatures through spring and summer allowed for balanced maturation — picking at the perfect intersection of flavor, sugar, acid, and tannin maturity. Harvesting began with earlier sites in September, with moderate heat in early October accelerating picking through the end of the month.

Food Pairings

Grilled ribeye, BBQ brisket, lamb chops, wild boar, aged cheddar, and hearty pasta with meat sauce. Proprietor Scot Bilbro notes that Zinfandel's naturally varying levels of ripeness can lead to raisiny flavors if all the grapes are picked at a higher brix. "If you bring Zinfandel in over 25 brix, that means the juice inside is at 25, but the skins have a lot more sugar, and the level will go up to 28 or more," he explains. "So, we pick at 23, 24 and just shy of 25. You can enable the wine to show off layers with those different picks." This strategy led to a gorgeous Angeli in 2021 that is incredibly expressive and perfumed. This particular Late Harvest Zinfandel is made from grapes grown on the Louvau Vineyard in Dry Creek Valley. One of the reasons that we love this vineyard is the wonderful acidity of the grapes. The resulting wine is focused and clear—it’s never cloying, and always finishes with a crisp, clean, sweet-spicy note.

We create the conditions for making Late Harvest Zinfandel by allowing the grapes to hang on the vine approximately 3--4 weeks after they normally would be picked for a dry wine. These grapes were picked on October 30th on a beautiful Fall day, and the grapes arrived at the winery at 40° Brix of sugar. We crushed the grapes into a small 1,500-gallon tank and as is our tradition at Dashe Cellars, we fermented the grapes naturally, using the native yeasts that naturally live on the skins of the grapes. We let the grapes macerate to gain color and flavor, and then allowed the tank to warm. The fermentation took off quickly, and then naturally halted when the alcohol had reached about 15.5% and the sugar level was about 9%. We always allow the wine to achieve its balance of sweetness and alcohol naturally, by letting the fermentation finish on its own. The wine was aged in older French oak barrels so as to not overpower the intensity of the fruit. We bottled the wine as soon as possible to maintain its fresh fruit flavors and conserve its sweet concentration and purity.
